Duo of Turkey Sliders

Small Bites
by Chef Steph G. perfect for your next Cocktail Party

For all you caterers and home entertainers this is one of my all time, as Guy Fieri says, winner, winner chicken dinner...
If your still in the woods after reading this one, call me for a cooking lesson, I won't tell...

Twice The Spice Small Bites
Let's talk sliders. Some times it's the simple things that makes for a perfect bite. For a
 super simple
 Hors d'oeuvre,
find some crusty bread, like a baguette.

Mix 1 lb of fresh ground turkey
sea salt, herbs & spices to suite your taste buds
a little of your favorite sauce for moisture
an egg if you like
a little bread crumb if you like
mix form small patties to fit your bread

The fun part is the toppings
use anything you like.
I used 1 onion sliced that I caramelized in a little
butter w/ sea salt & pepper
than deglaze your pan with a little wine
add 1 tab of butter to finish sauce when done
(meaning just swirl butter in pan with heat off)

Crispy Fresh Herbs
Just fry herbs

Your favorite  Cheese

just melt on top by
placing a lid on top of pan with sliders or putting under broiler

Cook one to taste & reseason if necessary.
Grill or toast with your favorite, butter or EVOO.
Spread your favorite mayo based sauce like an aioli
on your grilled bread
and assemble.

Enjoy!!!
