Refreshing 1st Course "Gazpacho"

"GAZPACHO "  
Cool & Refreshing Summer Treat...
Quick & Easy
"Heart Healthy"
1st couse
 
Plum Tomatoes
 
Cucumbers
(peeled & chopped)
 
Peppers
(seeded & chopped)
(red, green, orange or yellow)
 
Vidalia Onion
(peeled & chopped)
 
Parsley
(chopped)
 
Lemon Juice
(fresh squeezed)
 
Sea Salt
 (kosher or hymalayan)
 
Pepper
 
Dr Braggs Apple Cider Vineger
 
EVOO
(extra virgin olive oil or grape seed)
 
Celery
 (for garnish & a bit of crunch)
 
Greek Yogurt (topping)
 
Rule of thumb three parts Tomato to one part Cucumber, Onion & Green Peppers.
 
Score Tomatoes at top and bottom
(small cross cut at surface of tomato skin, not thru the flesh)
 
Blanche tomato in boiling water for a few seconds
(helps to loosen skin easily)
 
Put Tomato in an ice bath (large bowl of cold water w/ ice)
to help cool down quickly and prevent from cooking.
 
Tomatoes should still be firm.
Peel, remove seeds and chop.
 
"add to blender"
 
fresh or roasted garlic (blend)
tomato (blend)
cucumber, green peppers & onions (blend) 
fresh parsley (blend)
squeeze of fresh lemon
dash vinegar
double dash evoo
salt & pepper to taste (blend until smooth)
taste reseason if needed
chill in fridge
pour in shooter glasses
top with greek yogurt & celery stick

Cod
Drizzle of evoo
Crispy Shallots
Sprinkle with fresh herbs.
